Two good meals lately

Dear internet, 

Not exactly part of my quarantine meal ranking because these are recipes we make a lot, but they turned out well.

The beef comes from Roseda Farm, bought it at Giant. The first time we made this recipe with the Roseda meat, I was suspicious.

“It smells weird,” I said.

“That’s how meat is supposed to smell,” Babbo said, sniffing the air appreciatively. “That other stuff at the grocery store is fake plastic meat.” 

Babbo loves this beef; he said it tastes like the kind of meat that is widely available in Europe, better than any of the other beef options at Whole Foods, etc. So now it’s the only beef we buy.

Quarantine Meals Ranking 25

Dear internet,

This is a soup I make a lot. The pressure cooker makes it a lot easier, because frozen lima beans take a while to cook.

1 bag frozen baby limas

1 bag frozen spinach

carrots, celery, onion

salt pepper garlic

Plop it all in a pressure cooker, add 4.5 cups water, cook on high pressure 12 minutes. I like to add some protein, so I ate it with some leftover pasta with meat sauce.

Dear internet,

i used to drive past a white castle on my way to work and yet, I never stopped. because there were tons more better mom and pop slider places. now let’s all shed a tear for the fact i now live in dc where sliders are a total wtf. i mean yes there is mcdonalds, my very favorite restaurant. but a mcdonalds hamburger is a mcdonalds burger. it just doesn’t capture that feeling you get when you sit on that creaky vinyl barstool last reupholstered in 1982, watching the be-tattooed cook squirt water from an old ketchup bottle at the slider, then cover it with a metal lid to steam it. and everything is cooked on that flattop. everything. onions peppers meats fried raviolies. everything but the fries.

So I bought some freezer case White castle and that is what we ate for dinner. It was actually not too bad. 60 seconds wrapped in a paper towel in the microwave. came with onions, added ketchup and mustard. 10/10

Quarantine Meals Rankings 23

Dear internet,

At long last I made Meatloaf. My recipe: 1 lb ground beef (90/10), 1 pound ground turkey, a handful of panko bread crumbs, a handful of dried onion flakes, then some garlic powder, 2 eggs, salt and pepper. I usually add Worcestershire sauce, too, but we don’t have any. 1 hour ten minutes at 375 F. It was kinda tough but all right. A 7/10 purely because I love meatloaf.

With sweet potatoes microwaved 18 min in their jackets and a fresh sliced tomato salad dressed in olive oil, salt, and vinegar.

Already useful

Dear internet,

This blog is already useful for me. I want to make Meat and Potatoes for dinner but I could not remember how long to cook the meat. Looked back at my Quarantine Meals Rankings and boom, there it is, 45 min for the meat and then 5 min for the taters. No overcooked stringy beef for me, not today at least.
