Dear internet,

Not exactly a new recipe, but repurposing an old recipe. My nacho recipe but with rice, avocado, and salsa, wrapped up in flour tortillas. I bought corn tortillas but they had this odd strong floral scent? So no to that.

My rice was a little crunchy because I didn’t add enough water but otherwise, 9/10 for Make-Your-Own-Burrito.

Dear internet,

Here comes…Cod and Pan-Crisped Potatoes! Like Salmon with Potatoes, but, with cod. Whole Foods sells (allegedly) wild-caught Icelandic cod. Each piece is individually vacuum sealed BUT there are no perforations in the plastic wrapping so you have to cut the pieces apart. Adds a bit of excitement to the process.

I also took a photo of my warm asparagus salad. Wrap asparagus in 4 layers of wet paper towel, microwave 5 min, toss with olive oil, vinegar and salt. 

10/10

Quarantine Meal Ranking 26

Dear internet,

It is time for another Quarantine Meal Ranking. This is a Corn, Tomato, and Basil salad with salt, pepper, olive oil, and Modena balsamic vinegar.

It was fun to make. I microwaved the corn in the husk, 3 min, then sliced off the kernels. The Campari tomatoes were good. However, the basil was bitter. So,  0/10
