We continue the celebration of the triumphant return of our electric pressure cooker with the following recipe: Meat and Potatoes.
Cook a chopped onion or two, 3 pounds beef stew meat, and salt/pepper/garlic/tomato paste and 2 cups water for 60 minutes. Uncover and add cubed potatoes and cook under pressure 5 minutes more.
In the future I would cook the beef 45 minutes, then add the potatoes and pressure cook 5 minutes more.

I call this one, Second Breakfast. Equally good for lunch or dinner,too.
just scrambled eggs, crispy bacon, and toast with strawberry preserves and butter. Usually I like the pasture-raised eggs, but i’m just glad to have conventional eggs at this point.

Another favorite: Nachos. Brown a pound or two of meat with salt and pepper and garlic powder, add a can or two of beans, a can of green peppers. Serve with chips and good salsa and sour cream and cheese. Reheats well. 10/10.

Another day, another meal. One good meal a day helps me get through the Shelter In Place situation.
I made barbecue pork ribs with rice and mixed veg. Put 3 lbs pork ribs in a dutch oven with an onion and two cups water, salt and pepper, for 2 hours at 350. When the meat’s falling off the bone, remove bones, drizzle bbq sauce on top, and eat. Yes it was dry. Very, very dry. 5/10
And today for lunch I had the ribs in the form of a sandwich. 10/10
